SECURITY.md "Supported versions" still says v0.x

SECURITY.md's "Supported versions" section still reads "The latest released version (v0.x) is supported," but the repo shipped v1.0.0 in July and is now on v1.1.0. Update the wording to reflect the actual current major version.
