On a recent document I find that pdfs compiled with XeLatex will not show minus signs in maths mode but the same symbol in outside maths mode displays fine.
This is not a problem of using the wrong symbols in the latex source file.
There is no actual problem with the pdf as any other Linux pdf viewer will display it fine including the minus signs it is just when viewed in Pdf4Eclipse that they don't show.
I have been unable to test it on other operating systems.
