Default NodeJS version is EOL

Description

The default version of Node-JS installed by the go installer is v20. This is EOL.
Additionally, with the advent of Node-RED v5 requiring v22.9 as a minimum, we should consider that as a new minimum.

The docker builds were updated via: #646

One remaining task is to update the default Dockerfile to have 22 as its default version.
