[FEATURE] OpenTelemetry Instrumentation

I think KAST needs a lot of instrumentation with OTEL to trace behaviour. 

I mostly need lots of Spans to know what job is being made. 
Logging is nice too with the events and data related. 

Since KAST is integrated with Aspire, it would provide a nice viewing experience to debug.
