Upgrade to latest OpenSearch chart to have ServiceMonitor

The current version chart of OpenSearch doesn't come with ServiceMonitor but latest chart has it. Appreciate upgrading to latest chart version so we can have ServiceMonitor for OpenSearch

Graylog Chart version: 2.3.10 comes with OpenSearch 2.8.0 chart version
Yet, OpenSearch chart version 2.32.0 has ServiceMonitor component

update is done. latest helm chart has the latest versions of mongo, graylog and opensearch.
