Route PDF generation

We need to add PDF generation for mobile library routes. This will include:

- Route name
- Organisation name
- Mobile name
- Stops in route and their times (in correct order)
- Dates

**Acceptance Criteria**
- API route added to get the PDF
- Open API documentation updated
- PDF tested for multiple routes
