Migrate project tracking from ChatGPT to GitHub Issues

Scope: Move ongoing "Look at what AI can do" project tracking from ChatGPT conversation notes into GitHub Issues.

Checklist:

• Inventory current project/task notes stored in ChatGPT history (summaries, decisions, todos, owners, timelines).
• Create or update GitHub issues for each active project/task with clear titles, descriptions, owners, and next steps.
• Link any existing repo artifacts (branches/PRs/docs) to the new issues.
• Close out or archive superseded tracking docs/messages once migrated.
• Document a lightweight process for adding new work items directly in GitHub Issues going forward.
