Fix test-coverage workflow upload error by adding Codecov token

Hey @jdblischak do you mind working with @keaven to add the organization Codecov token to this repo so the test-coverage workflow can upload the test coverage properly? Thanks!

Documenting the situation:

• The test-coverage workflow failed for the most recent commit 205ed44 (run)

error - 2026-02-24 05:40:42,666 -- Upload failed: {"message":"Token required because branch is protected"}

• The current test-coverage.yaml matches the upstream one in r-lib/actions, and thus does not need to be updated

• I emailed @keaven with instructions to obtain the Codecov upload token and register it with GitHub Actions as the repository secret CODECOV_TOKEN

I defined the repository secret CODECOV_TOKEN. After #47 was merged, the coverage workflow running on main successfully recognized the token and uploaded the results.
