Enhancement: Create a `source_data_versions.csv` as an export

This is an enhancement that can be made once we have some downtime but we want to create a table of source_data_versions which will contain the specific version of each dataset we use in 01_dataloading.sh so that we have a specific record of which archived datasets we are using for each official release of DevDB.
