Documentation cleanup and updating (new server API, and server launch switches)

Because there are new APIs overlays and admin UIs can use to get smashgg data, the docs need to be updated

Things to update:

• SmashGG endpoints (docs/api.md)
• !serverconfig "global" call (docs/api,md and docs/overlays.md)
• @scoreman/server launch switches (packages/server/README.md)
• Update sample return responses (docs/api.md) with the new fields (player status, and commentator enable/disable)
• Document how to enable/disable/configure auth on POST /api/scoreboard (the file is in packages/server/data/users.json.sample). This can be a whole new file within the docs dir, like docs/auth.md
• General revision of all the README.md in every package
