[Job Modification] Need GitHub Metrics From Several IBM Project Repositories

Description

Need to create jobs to collect GitHub metrics for several public IBM GitHub repositories:

1. Unitxt (@deanwampler , Peter)
2. Docling (@AF-IBM)
3. GEO-Bench (@AF-IBM)
4. Terratorch (@AF-IBM)
5. Models - TBD (@AF-IBM)

Process for adding these:

AI Alliance responsible party (GitHUb handle in parentheses above) needs to determine the repository owner and contact them explaining what we are trying to do here, and have them follow the "How To Contribute" section in the AI Alliance Analytics repository.

The "How to Contribute" guide is missing three additional secrets...this is by design. Please contact @jolson-ibm to get the complete list of all six (three documented, three not documented) secrets before contacting the repository owner.

Peter Santhanam needs to be added to this ticket once he gets a GitHub login.
