[maestro-flow] Update node versions to x.y instead of x.y.z

On flow-workbench, node-version of `1.0.0` complains to be "upgraded" to `1.0`. It seems like we went from `x.y.z` versioning to `x.y`. Please sync with stakeholders and fix the skill.
