use config file for gunicorn

Currently all configuration options for gunicorn are set in a Docker-compose file. That limits the documentation

attempted to use https://github.com/allofphysicsgraph/proofofconcept/blob/gh-pages/v7_pickle_web_interface/gunicorn.config.py but it does not seem to work
