[Feature Request]: Add GUI option to open project in read-only mode

What would you like to happen?

This is specifically cool to open a project in a zip file.
The main issue right now is that the GUI tries to write to the project-config.json file.
That's not possible in a zip file obviously.
On the command line (hop conf) we have option --project-keep-config-file for this same purpose.
