Switch from poetry to uv

As the title says, its probably time to switch from poetry to uv.

the only issue that I see for the migration is to replace the current dynamic versioning system that is used which I really like and would like to keep.

for the octopin version I tried to come up with something similar using uv, which is probably good enough.

I already migrated some other project from poetry to uv, and it was mostly painless and easy.
