Bump dependencies

Hello :)

Thanks a lot for this nice work that really helps to interact with real game engines !

Would it be possible to bump torch, gymnasium, etc., to their newest versions? (2.10, 1.2.3 etc..)
As of now, I have to dump all the rest of my dependencies to be compatible with this project and I usually would but some have breaking changes (like gymnasium > 1.0.0)
