Should we remove the Fastify plugins and let users handle them?

Our config is nothing special, particularly for cors where there is no config. We could let users handle registering and updating these themselves. We can document the existing setup a an example, but I think we should pull these plugins out. (We might still need them as devDependencies for tests).

Both JWT and CORS are pretty important features for the eik service, so we'll keep shipping with them.
