[Liquidity] Add pool health and reserve drift monitoring

Liquidity pools need monitoring that surfaces unhealthy reserve ratios or abnormal drift before users route volume into them.

Acceptance criteria:

• Track reserve changes over time.
• Flag pools with degraded or imbalanced reserve conditions.
• Surface the health signal in backend or dashboard views.
