Extend support for Fossology API v2

Currently only some endpoints are supported. In the long-term we should make sure that all endpoints mapped by fossology-python support v2.

I’d like to work on extending API v2 support.

Plan:

• Find wrapper methods still using /api/v1
• Compare with FOSSology API v2 docs / OpenAPI
• Update endpoints + response handling
• Add tests for the newly supported endpoints

I’ll start with a small focused PR for 1–2 endpoints first, then continue with follow-ups if needed.

Hi @deveaud-m 👋

I opened PR #157 which adds a dedicated unit test for API v2 list_users().

It mocks all v2 initialization calls triggered by Fossology(version="v2")
(/health, /info, /users/self, /folders/{rootFolderId}) so the test runs without a live server.

Tested locally:

• poetry run pytest tests/test_users.py -k list_users_v2 -vv

Would love your review — happy to continue with more v2 endpoints next.
