chore(k3s): archive and remove n8n, update teardown runbook
Archive n8n manifests to archive/ and remove from active codebase. Windmill will replace n8n as the workflow automation platform. Also fixes teardown runbook: - Corrected ansible ad-hoc command syntax - Added missing DO load balancer (ops-lb-logs-k3s-nyc3) - Fixed volume sizes (250 GiB, not 100 GB) - Marked completed phases
