RUSTSEC-2023-0089: Unmaintained warning, because of atomic-polyfill -> heapless dependency

I understand that heapless can't easily be upgraded, but since https://rustsec.org/advisories/RUSTSEC-2023-0089 postcard triggers an unmaintained warning unfortunately

Yeah, this is probably going to cause me to pull the 2.0 trigger. Hopefully this weekend.

@jamesmunns side note: I want to call out that postcard has been one of the most useful dependencies in my stacks since I found it. Having easy, stable, clearly specced and fast serialization, that just works is really great!
