refactor: adjust all code in simulation and rosters folder to adhere to cleaner architecture (interactor, presenter, SOLID)

as mentioned in the team meetings~ when paul viewed our code during office hours he gave a lot of "constructive criticism"

ie. we are missing things like interactor, presenter, and SOLID.

this PR will mainly be to refactor code for the simulation and rosters subapp folders!
