[idea] Replace SPIFFS with supported Flash Filesystem

SPIFFS has been depreciated in favor of LittleFS. We should look into alternative flash filesystems going forward.

Possible Contenders:

• LittleFS
• YAFFS
• STORfs (Maybe fork and modify it? Gives us a good place to start at least...)
