docs(license): use verbatim official Apache-2.0 text so it's detected as Apache-2.0
The LICENSE files carried a paraphrased rendering of Apache-2.0 (the body was reworded throughout, not just the appendix), so GitHub's licensee and package registries classified it as "Other" instead of Apache-2.0. Replace the root and all per-package LICENSE files with the verbatim official Apache-2.0 text, keeping the "Copyright 2026 MetaObjects Contributors" line in the appendix (licensee strips copyright lines when matching, so detection is guaranteed). server/java/LICENSE is intentionally left untouched — it carries the long-lived Java lineage's own copyright and is already recognizable Apache-2.0.
