I added an APIs.json for OpenAI. It is a single API and a set of common properties. Pretty straight forward. There might be more that can be added.

I am thinking about how I want to break up the OpenAPI for the OpenAI AI - https://raw.githubusercontent.com/openai/openai-openapi/master/openapi.yaml -- some of the tags describe the separation I am looking for, but it doesn't do it all for me. I will liked group based upon base path.
