Add ecommerce profile

Goal

Add an e-commerce customer AI profile.

Scope

• Define agents, tasks, prompts, skills, ticket rules, memory rules, and owner escalation rules.
• Suggested agents: front office, order support, complaint/refund handler, product advisor, owner.

Acceptance Criteria

• Profile follows docs/17-profile-template.md.
• Refund and complaint cases require owner policy boundaries.
• Profile can run through the sandbox.
• Docs explain intended use cases and boundaries.
