Add education profile

Goal

Add an education/course/training customer AI profile.

Scope

• Define agents, tasks, prompts, skills, ticket rules, memory rules, and owner escalation rules.
• Suggested agents: front office, enrollment advisor, learning support, admin/payment handler, owner.

Acceptance Criteria

• Profile follows docs/17-profile-template.md.
• Payment/admin cases respect approval boundaries.
• Profile can run through the sandbox.
• Docs explain intended use cases and boundaries.
