Header/mode line is not clickable #448

Description
The header and mode line have entries for the current model and current mode, but these aren't clickable to change them, and help-echo doesn't include keybinding information.
In the words of one of my users:
- The modeline has some entries about the current model, mode, usage, etc, and these have some helpful echo text. The status header line has this information but no echo text. It would be nice if (a) both copies had the echo text, (b) there was an appropriate clicking behaviour to change the option, and/or (c) the help text told you the keybinding to change the option
- it would also be nice if there were dedicated faces for the different sections of the modeline/status line (even if they just inherit from font-lock-{constant,variable-name,type}-face, warning, success, error)
