for Scripts you should do Mapping of Audio / Subtitlestreams like this:
-map 0:a:m:language:deu? -map 0:a:m:language:ger? -map 0:a:m:language:eng? -map 0:a:m:language:und? -map 0:s:m:language:deu? -map 0:s:m:language:ger? -map 0:s:m:language:eng?
this maps (in my case) all english and german audio and subtitle streams.
the ? at the end means "when available"
the Audiomapping with "und" means undefined Language (When you got Files, that have no proper Audio Tag)
