feat: fetch GonkaGate models dynamically

Summary

• use authenticated GonkaGate /v1/models responses as the installer model catalog source
• validate --model after fetching the live catalog and default prompts to the first returned model
• update merge, verify, tests, and docs to remove the checked-in user-facing model registry
