feat: fetch GonkaGate models dynamically

Summary

• fetch and normalize the authenticated GonkaGate /v1/models response as the runtime model catalog
• validate --model, interactive selection, defaults, provider writes, install state, and durable verification against live fetched ids
• remove the checked-in runtime model registry and update docs/tests to prevent it returning
