StartUSD bridge has expired. Updated all documentation to reflect that SUSD is no longer part of the active system: - overview.md: removed StartUSD from bridge table and bootstrap warning - reserve.md: updated balance sheet example to use USDC instead of StartUSD - smart-contracts.md: condensed StartUSD section to historical note - smart-contracts/functions.md: marked StartUSD section as historical - swap.md: replaced full bootstrap section with short historical note, moved StartUSD to expired status in bridge tables

Approach
Rather than deleting all SUSD references, contract addresses and the historical context are preserved in condensed form (marked as "Historical" / "Expired"). This keeps the documentation accurate for anyone looking up past transactions.
