Add feature-complete install support with SeaweedFS, PGBouncer, and optional asset and certificate setup

What Changed

The default install now uses SeaweedFS for event and profile storage, PGBouncer for database access, and updated service images and requirements.
Installations can now migrate existing node store data, profile files, and Postgres settings to the new defaults, with prompts or automatic updates during setup.
Users can now choose a smaller errors-only setup, run the installer with Podman, and see clearer minimum system requirement checks.
New optional setup steps add local JS SDK assets and custom CA certificate trust stores for supported services.
Backup, restore, release, and test flows were updated to match the new stack and cover the added features.

With #3595, we now check both `docker-compose` and `docker compose` versions so this patch removes the implicit fallback to `docker-compose` for `$dc_base` and makes it explicit.
