feat(frontend): add privacy-respecting error and product analytics

Add Sentry for error tracking and PostHog for funnel analytics with recursive scrubbing of sensitive hex, address, and form values. Both integrations are absolute no-ops when env vars are unset. Added unit tests for recursive scrubbing.
