This PR is mostly notebook updates as well as plots and pointing data from the pointing run done with Binospec on March 26, 2025.
Some additional changes were made to deal with failing CI. For some reason,
pymcdoesn't work properly when installed viapip. Installing viaconda-forgedoes work and is what was used successfully for running it locally. An additional fix to that was codified to make sure the Apple compilers are used instead of ones supplied byconda-forgeon Darwin platforms.There is a further issue of CI failing under linux even with a
conda-forgeinstallation. Switched affected tests to amacosrunner to get this PR to pass. Will follow up with linux-related fixes in a future PR.
