fix: project_id/manager_id issue

Description

Summary

• Fix 4 breakpoints where project_id and manager_user_id were silently dropped during memory extraction, causing some modalities (image, file, fast-aggregated, simple_struct) to lose these fields.
• Add unit tests covering all affected code paths (fast/fine/transfer × with/without user_context).
