python3Packages.stac-validator: fix pyproject name

Things done

We could also update Nix pname to stac_valid to match pyproject name,
but stac_validator looks more appropriate/correct.

This PR is needed to unbreak the package.

I believe this will be easier for upstream: if they change their package name in pyproject, they'll have to change their name in pypi too, right?

It looks like upstream changed the pyproject name from stac_validator to stac_valid recently. Looking at the commit message, I am not really sure if this change was intentional.
