AC works by compressing refrigerant gas in a long (copper) tube with a hot and cold side. The coils have fans connected to them that blow air past them, cooling the inside and heating the outside. AC does not work if the air outside is cooler than the air inside because there must be a temperature gradient in the tube. When a liquid evaporates, it absorbs heat. When a liquid condensates, it releases heat.
