docs(changelog): fill the Unreleased section for the next release#109

The release workflow rolls [Unreleased] into the version section and uses it as the GitHub release body, which the in-app updater shows as "What's new". It only listed the Linux DMABUF fix, so v1.0.48 users would have seen an update popup describing none of the actual changes. Covers every user-visible change since v1.0.48; internal refactors, CI and test-only commits are deliberately omitted.
