chore: update some dependencies

This pull requests updates all of the dependencies with these exceptions:

• eslint and related (will attempt in separate PR)
• jest and related (will attempt in separate PR)
• old version of inquirer (this causes issues and we need to move to the new one anyway
• ora (this one is causing issues as well; I'm not sure why yet so I'm holding it back for now)
• updated tsconfig to latest module type
