docs: add MCP, OpenTelemetry, and Redaction to the reference sidebar - #93

These three reference pages (reference/mcp, reference/opentelemetry, reference/redact) existed and built, but were reachable only via in-page links — they were missing from the VitePress sidebar's Reference group, so they weren't browsable from the menu.
