Here is the official documentation (they call it their "field manual") that explains OrbitDB and how it works with IPFS - https://github.com/orbitdb/field-manual. There are some missing sections in there, however, as it is still in alpha.

The IPFS website has a really clear, concise explanation of how it works - https://ipfs.tech/
