docs: updating names and links in preparation for 2026-02 delivery

• Regenerate git_as_story.pdf/.html

Notes:

• Will learners initially use HTTPS or SSH connection?
• When I go to the URL "https://uoft-dsi.github.io/git/interactive_problems.html#git_basics" in ./02_activities/practice/git_basics.md I get an error message "No problem set specified in URL hash."
• "01_materials/05_git_merge_conflicts.md" references "https://github.com/simeon-demo/team-playlist.git", but that repo doesn't exist.
• Similarly, the recipe book repo doesn't seem to exist.

We didn’t set Vim as the default due to anticipated support issues, and I have a similar concern about Emacs during onboarding.

Currently, we ask participants to use VS Code as their default editor for onboarding (1) since it’s generally more accessible for learners.

That said, if you prefer Emacs, we’re happy to accommodate.
