Update mentors data to reflect agreed standardised sorting. This has been documented here: https://docs.google.com/document/d/1GwlleBNScHCQ3K8rgvYIB3upIr1BylgWjGR2jxwYWtI/edit?tab=t.0

Please refer to the above document for future updates when:

• preparing to announce ad-hoc applications opening for a specific month
