docs: expand README architecture and usage guide

• replace the existing README with a more detailed guide grounded in the current repo
• add in-depth architecture documentation and Mermaid diagrams for the runtime and benchmark pipeline
• document setup, server flow, inference, benchmarking, reporting, testing, and output artifacts
