feat: release & deploy: jlink for packaging, jreleaser for release and deployment

• Use jlink for standalone distributions
• Use JReleaser as the only interface for assembling, releasing, and deploying
• Update workflows
  • build-main.yml deploys snapshots and publishes a rolling GitHub release
  • release.yml deploys a release on Maven Central
• Automatically extract appropriate version for CLI's --version
• Get rid of the former sonatype publishing workflow
