test(workspace): run all package test suites

Summary

• add explicit test scripts to the app and pi workspace packages
• update the root test script to run opentui, app, and pi test suites so CI covers all package tests
• restore full local validation by adding workspace type shims for Bun and OpenTUI React, and by using this repo's own renderable option types instead of relying on missing upstream declaration metadata
