docs: update README

Note

Updates README to better showcase capabilities and provide runnable setup examples.

• Replaces simple feature list with a detailed "Available plugins" table (Blog, AI Chat, CMS, Form Builder, UI Builder, Kanban, OpenAPI, Route Docs, Better Auth UI) and adds a call to request plugins
• Clarifies that plugins ship frontend+backend and adds issue link for requests
• Updates minimal usage: adds createMemoryAdapter, basePath, and exports { handler, dbSchema }; revises client example to getStackClient with blogClientPlugin config and QueryClient
• Adds code block titles, tweaks wording, and links to the full installation guide
