chore: correct store listing org name and data description

What

Updates the Google Play store listing metadata:

• Org name: Copenhagen Center for Health Technology → Copenhagen Research Platform (CARP) in both the short and full description.
• Data description: the full description previously listed passive data as only "step count". It now states that, depending on the study and after explicit consent, collected data may include surveys and Health Connect health/activity data (steps, heart rate, exercise, blood pressure, blood glucose, oxygen saturation, body temperature, etc.).

Why

The listing's passive-data line ("step count") contradicted the 15 Health Connect read permissions the app declares, which contributed to Google's "insufficient information / excessive scope" review findings. Aligning the listing wording with the requested permissions removes that inconsistency.

Notes

• Short description stays within Play's 80-character limit (73 chars).
• Listing copy only; no manifest or app behaviour changes.
• These files are repo metadata — the change goes live when the listing is published via the release pipeline / Play Console.
