Bumps vitest (^3.2.6^3.2.7) and @vitest/coverage-v8 (^3.2.4^3.2.7) to the latest v3.x release.

Vitest's latest dist-tag is already on 4.x, so this deliberately stays on the newest v3.x rather than jumping a major.

Applied across all workspace packages that declare vitest, plus the e2e test applications that use it (debug-id-sourcemaps, the four solidstart* apps). Those e2e apps were previously on much older majors (0.34 / 1.5); their vite versions (^5.4.x, and vitest bundles vite for debug-id-sourcemaps) satisfy vitest 3.x's peer requirement.
